Making Absolutely Delicious Peanut Butter Cups for Vegans is Easier Than You Think!

When you think of iconic duos, what comes to mind? Sonny and Cher? Batman and Robin? Bert and Ernie? For us, it’s chocolate and peanut butter, one of the most delicious duos ever discovered.

Unfortunately, for health-conscious or vegan chocolate lovers, finding dairy-free chocolate peanut butter cups suitable in stores can be challenging, or even impossible, due to a lack of options. Reese’s peanut butter cups are ubiquitous in convenience stores across the continent, but their heavily refined nature and dairy elements make them unsuitable for vegans.

To make your own peanut butter cups at home, you don’t need to be a dessert cuisine expert or confectionary wizard, just someone who loves to eat chocolate treats! For this delicious recipe template, all you need are four essential ingredients, a bit of common kitchen equipment, and a little time and patience.

INGREDIENTS

VEGAN CHOCOLATE CHIPS – 1 CUP

Dark chocolate chips are usually a good choice here, but a chopped up, the vegan-friendly chocolate bar works just a well.

PEANUT BUTTER – ½ CUP

Many people prefer natural peanut butter for health reasons, but it can be hard to work with due to oil separation. Using regular creamy peanut butter will make for a peanut butter mixture that’s easier to work with.

COCONUT OIL – 2 TABLESPOONS

Refined coconut oils will impart less of the coconut taste, but unrefined coconut oil works just the same to help smooth out the melted chocolate. 

POWDERED SUGAR – 4 TABLESPOONS

Using this sweetener makes for a tastier peanut butter mixture that is also easier to work with. Honey or pure maple syrup can also be used, but powdered sugar makes the best PB mixture.

EQUIPMENT

MUFFIN TIN

Use a standard size muffin tin or a mini muffin pan, for full size or mini peanut butter cups.

MUFFIN TIN LINERS

Paper or silicone cupcake liners can be used interchangeably, so go with availability and convenience for this choice.

HEAT SAFE BOWL & MIXING BOWL

One bowl is needed for the peanut butter filling, while the other will be used to melt your chocolate mixture.

SPOON / LADLE

Pretty much anything can be used for mixing and pouring, this one is entirely a matter of personal preference. 

DIRECTIONS

Once you have all your ingredients assembled, constructing your peanut butter cups only requires a few steps:

  1. Place liners in your muffin / cupcake tin and set aside.

  2. Using a double boiler, melt down your dairy-free chocolate and mix in coconut oil.

    a) If you don’t have a double boiler, you can make a DIY version by putting a glass bowl over a regular cooking pot filled with a few inches of water. The indirect heat makes it easy to melt your chocolate without it getting too hot. 

  3. Spoon a small amount of the chocolate mixture into the liners, roughly enough to create a chocolate layer that covers the bottom third. 

  4. Place chocolate-lined tins in the freezer for 10-15 minutes, or until hardened. 

  5. While the chocolate is setting, mix peanut butter and powdered sugar together. It will take on a more dough-like consistency. If using unsalted peanut butter, adding a bit of sea salt will help round out the flavour profile. 

  6. Once the powdered sugar has been fully incorporated, shape small amounts into little pucks that will fit in your tins with a bit of room to spare all around. 

  7. Remove chocolate lined tins from the freezer and add the peanut butter layer. 

  8. Top up each tin with the remaining chocolate mixture, until they reach the size you want. Just make sure to completely cover the peanut butter in order to create a chocolate shell.

  9. Place tray in freezer for 10-15 minutes, or until your peanut butter cups have solidified.

TRY OTHER NUT BUTTERS

It’s tough to improve on the duo of peanut butter and chocolate, but some people swear by almond butter, so it might be worthwhile to try alternatives from time to time.

EXPERIMENT WITH DIFFERENT SWEETENERS

Almost any natural sweetener will help improve your PB cups, so feel free to experiment with coconut sugar or icing sugar. 

STORAGE

These homemade peanut butter cups should be kept in the refrigerator in an airtight container, where they will keep for up to two weeks. They can also be frozen for increased longevity, lasting up to four months in the freezer.
